KateWine is a family based winecellar. They are located in the region of Kakheti. Theier vineyeards are situated as in Telavi surroundings as well as in Kvareli area. Keti herself, her two sisters and parents take care of the vineyards throughour whole year. Keti is not only the professional winemaker but also the doctorate student, she writes her thesis about the „Impact of the Kvevri wines in the winemaking“.
She believes the Kakheti winemaking style and wine features should be preserved. The natural fermentation is a key in winemaking and it should not be lost in the contemporary market requirements. As she believes the wine should be made in Kvevri, she says: “working with clay, working with Kvevri is a remarkable emotion. The clay breathes and and gives life to wine. The moment grape juice hits the bottom of Kvevri, my family and I keep our fingers on pulse. We listen to it breath, controlling the fermentation temperature. In family we keep a turn, we stirring due to keep Chacha on the surface from drying out. Such a close contact, almost conversation with the wine is the main charm of Kvevri”.
