The grapes are harvested by hand at the peak of ripeness. After cleansing the bunch of grapes and crushing them, fermentation goes in stainless steel tanks. Before the sugar content reaches the desired level, we add separated, dried grape stalks back in tanks to maximize the texture of the wine. Then we leave wine in qvevri for 6 month.
